Winemaking
The grape clusters remain on the vine until early October, reaching over 30 days of over-ripening. The manual harvest selects partially raisined grapes, which are destemmed and macerated for 48 hours before being artisanally pressed in a small vertical press.
After fermentation, the wine, rich in sugars and aromas, is aged in a 500-litre French oak barrel for 12 months, achieving extraordinary complexity. The yield is exceptionally low, producing barely one 0.5 L bottle per vine.
Tasting Notes
Appearance: Bright golden colour with amber reflections, viscous in the glass.
Nose: Intense floral aromas of orange blossom and jasmine, with notes of honey, candied orange peel, and dried apricot. Subtle toasted and spicy nuances from the oak barrel.
Palate: Silky and enveloping on entry, with sweetness balanced by fresh acidity. Flavours of candied fruit, honey, and dried nuts, with a long and elegant finish marked by spicy notes and a subtle salinity.
Food Pairing
Perfect with foie gras, blue cheeses, citrus desserts, and almond pastries. It also pairs beautifully with dried nuts and dark chocolate with a high cocoa content.
