Sweet ROVER
Sweet Rover
The grape clusters remain on the vine until early October, undergoing an overripening process for over 30 days. Hand-harvested, only partially raisined grapes are selected, then destemmed and macerated for 48 hours before being gently pressed using a small vertical press.
After fermentation, the wine, rich in sugars and aromas, is aged in a 500-liter French oak barrel for 12 months, achieving exceptional complexity. Yields are extremely low, producing only one 0.5 L bottle per vine.Year : 2021
